The Ultimate Protein Power Bites

Protein power balls are such a yummy and healthy snack for when you're on the go! These are 10x better than any store bought snack bar and the best part is that you know exactly what ingredients are inside.

Ingredients

- 2 scoops vanilla protein powder

- 1 cup oats

- 2 tbsp chia seed, buckwheat, hemp heart blend

- 1/3 cup finely chopped dates - 1/3 cup cacao nibs

- 2/3 cup peanut butter

- 1/3 cup honey

- 1/2 cup ground flaxseed

- 1/4 tsp cinnamon

- 1/2 cup unsweetened shredded coconut

The secret ingredient to yielding the perfect power bites is having a good protein powder that is water soluble. Clumpy dry protein powder is no bueno so I always stick to my fav Jym protein for this recipe! This recipe yields 10-12 golf ball sized bites that are surprisingly filling and make for the perfect midday pick-me-up. (12 balls = 8.5g of protein each)


Step 1: In a large bowl or stand mixer, mix together all the ingredients until well combined.


Step 2: With clean and DRY hands press the granola like mixture into a ball. I know it may seem IMPOSSIBLE for this mixture to roll up and stay in shape but just keep pressing and pressing. If the mixture is absolutely too dry feel free to add more nut butter or honey... but I'd recommend trusting in the process! My mixture is always super crumbly to start but after a lot of tight squeezes between my hands, everything comes together and stays together really nicely.


Step 3: Store in the fridge or freezer and enjoy!!!
