Worlds BEST Banana Bread by Miss. Minutella

Listen up, those brown bananas are NOT going to waste this time because we're makin' the best damn B-bread you've ever had.

FINALLY, THE PERFECT BANANA BREAD RECIPE!!! When I tell you I've tried countless banana bread recipes over the years, I ain't lyin'. From adding sour cream to Chrissy Teigen's famous instant pudding hack.... I've tested all the combos, and I'm almost disappointed in myself to know that the most simple recipe was the best one all along. Miss. Minutella herself shared her recipe with me and it's absolutely to die for. Don't get me wrong, I was skeptical at first but this incredibly minimalist recipe is now my go to any day of the week.


.... and to answer your question, YES these slices are the most moist bites of heaven you'll ever have in your life.



Ingredients


- 1/2 cup softened butter

- 3/4 cup sugar

- 2 eggs

- 2 tsp vanilla

- 4-5 ripe bananas (approx 650 g total)

- 2 cups flour

- 1 tsp baking powder

- 1 tsp baking soda

- 1/4 tsp cinnamon

- 1 tsp salt

- 3/4 cup semi sweet chocolate chips



Step 1: Preheat oven to 300°F. Grease 2 8.5" x 4.5" loaf pans and set to the side.

No loaf pan? No problem! Some of the glass tupperwares these days are oven safe and they work perfectly. Make sure they are labeled "oven safe" on the bottom and you're good to go! I do this all the time since I only have 1 proper loaf pan (see in photo below).

Step 2: Cream together sugar and butter, that has been softened at room temperature (not melted), with an electric mixer for 3 minutes on high speed. Add the eggs, vanilla, and bananas and mix until there are no more big chunks and the ingredients are well combined.

Pro Tip: I'm always looking for shortcuts and I find you don't need to mash your bananas before hand! I just throw them right into the stand mixer with the paddle attachment and they mash right up.

Step 3: In a separate bowl sift all the dry ingredients and whisk them all together. Add the dry ingredients and the chocolate chips to your wet ingredients and mix on low just until combined. This should only take 30 seconds... you don't want to over mix!


Step 4: Pour the batter evenly into the two greased loaf pans and bake for 50 minutes on the middle oven rack. If you notice that your tops are browning early on, feel free to lightly cover with a piece of aluminum foil. Let cool for at least 15 minutes before taking a knife around the sides of the pan and serving!


Slice and freeze the second loaf for later or enjoy this delicious snack with friends and family!!
